It’s giving 🍂 Autumnal Vibes 🍂

Set the scene: You return from a blustery walk through crisp golden leaves, as you enter your front door you’re hit with the warmth and scent of this delicious Boston Beans recipe. It smells d-e-l-i-c-i-o-u-s; It smells like home 🥰

  • Oil
  • 1 onion, diced
  • 1 garlic clove, grated (or 1tsp ready made)
  • 2 sticks celery, diced
  • 2 tbsp tomato puree
  • 1 tbsp paprika
  • 1 tsp dried oregano
  • 2 tbs molasses
  • 2 tbsp yellow mustard
  • 2 tins beans, drained (borlotti, cannellini, kidney)
  • 2 tins tomatoes
  • Pinch of Salt and pepper
  1. Warm the oil in a pan on a medium heat. Add the onion and celery and sweat for around 5 minutes until soft and sweet
  2. Add the garlic and cook for another minute
  3. Add the tomato puree and paprika to the pan, cook for a minute, stirring to avoid it catching on the bottom of the pan
  4. Next add the molasses, mustard, beans and tinned tomatoes, stir everything together and season with salt and pepper
  5. Leave to simmer on a low heat on the hob for around 40-minutes or until everything is cooked together and the sauce has thickened up a little
  6. Enjoy!

This is great served with rice, jacket potatoes- white or sweet or a favourite in my house is on top of cornbread with avocado and salad
