This delightful dish isn’t just breakfast—it’s a hug on a plate.

These golden spiced pancakes with apple, are infused with festive cinnamon and Christmas spices, topped with a drizzle of honey, and a dollop of creamy natural yoghurt. With the added oats, they’re a substantial, satisfying option to keep you full until lunch.

Makes 8-10 pancakes 

  • Knob of butter/spread 
  • 4 apples, grated 
  • ½ tsp cinnamon 
  • 40g sultanas 
  • Juice of ½ orange 
  • 150g plain flour 
  • 60g oats 
  • 2 tsp baking powder 
  • ¼-½ tsp mixed spice 
  • 180mls milk 
  • 1 egg 

Drizzle of Honey & Natural Yoghurt to serve 

  1. Start with making the apples.  Melt a knob of butter or spread it around a pan, then add the grated apple and gently fry for a few minutes to start to soften. 
  2. Add the cinnamon and stir through, followed by the orange juice and sultanas  
  3. Cook this over a medium heat for around 5 minutes until it has softened and most of the liquid has evaporated to make a sort of textured apple sauce.  Leave on the side until ready. 
  4. Take a bowl and add the flour, oats, baking powder and mixed spice then mix together. 
  5. Make a well in the middle of the mixture and crack the egg in and give a little whisk to break it up.  
  6. Pour in the milk and stir everything together well.   
  7. Heat a frying pan on a medium heat and add a small amount of butter/spread and use a pastry brush to rub all around the pan 
  8. Place a dessert spoonful of mixture into the pan and leave to cook untouched for about 1-2 minutes. Do this until all of the mixture has been used. 
  9. Once there are a few bubbles appearing on the surface of the pancake, flip the pancake and leave to cook for 1-2 minutes until golden brown on each side. Remove once you are satisfied they are cooked all the way through 
  10. Stack your pancakes on a plate and add your Spiced Apple mixture, Serve with a dollop of natural yoghurt and a drizzle of honey. 
  11. Enjoy! 


Top tip: The spiced apple mixture will keep in the fridge for a couple of days and is lovely added to yoghurt.  You could also sprinkle with nuts and seeds for some added nutrition, taste and texture!
