Tandoori Salmon Recipe – Serves 4

Salmon is an excellent source of protein and omega-3’s, so it’s not just tasty but is also a healthy and satisfying lunch option. This is one of my all-time favourite meals, especially in the summer time.

Here’s my tasty take on this super-easy recipe. Enjoy!

Ingredients

      • 4 Salmon fillets

      • 75g Natural Yoghurt

      • Juice of 1/2 Lemon

      • 1/2 Tsp Salt

      • 1 garlic clove crushed

      • 1Tsp Grated Ginger

      • 1/2 Tsp chilli powder

      • 2 Tsp Ground Coriander

      • 1 Tsp Ground Cumin

      • 1 Tsp Turmeric

      • 2 Tbsp ground Almonds (optional)

        1. Preheat the oven to 200c
        2. Place the yoghurt, lemon juice, salt, garlic, ginger, spices and almonds (if using) in a bowl and mix well to combine.
        3. Place the salmon fillets on a baking tray and spread the yoghurt mix evenly over the top of each salmon fillet.
        4. Place in the pre-heated oven for 15-20 minutes until the salmon is cooked through.
        5. Serve with wholegrain rice, salad or vegetables of your choice.
